Broccoli Soup

Healthy, delicious, and very easy to make, this is how I describe broccoli soup, one of the dishes we enjoy the most at home and one of the best ways to take advantage of this powerful vegetable.
The benefits of broccoli are vast and well-known (great contribution of fiber, folates, minerals, and vitamins), and because its consumption helps prevent cardiovascular ailments and for its antioxidant power, it also helps prevent cancer. As these reasons may not be enough for some, one sip of this broccoli soup encourages them to include it regularly in their diet.
To prepare it, you will only need broccoli, coconut milk, garlic, ginger, salt, and pepper to taste. The personal touch that I like to put in a few pieces of toast at the time of serving, or it could be some freshly cut potato sticks, as my grandmother would suggest.
The quantities of the ingredients are not exact and depend on the taste of each person. I am calculating them as I check and tweak it. For example, if you want a creamier soup, add more broccoli and less liquid. If you do not have coconut milk, you can use any type of milk (dairy, soy, or almond).
This mouth-watering soup will be ready in 15 minutes.
- 1 large broccoli corsage (about 5 cups)
- 1 clove of garlic
- 1 piece of ginger
- 3 cups of coconut milk
- Salt and pepper to taste
- Toasted bread to serve
- Bring broccoli, garlic, ginger, and coconut milk to medium heat.
- Season with salt and pepper.
- Once the broccoli is cooked, blend all the ingredients together until the vegetables are well combined.
- Check the seasoning.
- Serve with toast.
