Broccoli Soup

  • 1 large broccoli corsage (about 5 cups)
  • 1 clove of garlic
  • 1 piece of ginger
  • 3 cups of coconut milk
  • Salt and pepper to taste
  • Toasted bread to serve
  1. Bring broccoli, garlic, ginger, and coconut milk to medium heat.
  2. Season with salt and pepper.
  3. Once the broccoli is cooked, blend all the ingredients together until the vegetables are well combined.
  4. Check the seasoning.
  5. Serve with toast.
