Hemos querido deleitarnos esta semana con estos cupcakes rellenos de helado, inspirándonos en las famosas ferias estatales, típicas de Estados Unidos. Por esta época empiezan a celebrarse por todo el país estos divertidos eventos, a los que muchos acuden solamente por saborear los deliciosos postres que allí se venden.
La primera vez que asistí a una de estas ferias, quedé fascinada con el provocador aroma que despiden los kioskos de dulces presentes. Antojan tanto, que sin tener hambre, te ves en cuestión de segundos haciendo fila por conseguir uno.
En las ferias estatales es común ver platos de comida frita con ingredientes inimaginables. Allí probé las galletas de helado fritas, los pasteles fritos, pero quizás lo más apetecido, sean los populares funnel cakes.
Los cupcakes de nuestra receta, pueden hacerse con masa casera o con aquellas que vienen en caja. Yo quise acortar tiempo utilizando una de estas últimas, e incluso hasta la cubierta la compré ya lista para usar. Sin embargo, una rica manera de preparar una cobertura, es la que encuentras aquí.
Puedes elaborar los cupcakes, la cobertura y el helado con los sabores que prefieras. A mi siempre me ha gustado la combinación de pastel de chocolate con helado de vainilla, por tal razón fueron los que elegí para esta receta.
Todos los ingredientes, y hasta unas gomitas que encargó mi hija, los conseguí en Smart & Final a muy buen precio. Lo mejor, es que actualmente ofrecen descuentos en los helados con la promoción First Street Ice Cream Cowdown, vigente del 13 al 26 de mayo.

¿Con cuál combinación de sabores disfrutarías esta delicia?
- 1 caja de mezcla para cupcakes
- 3 huevos
- ½ taza de aceite vegetal
- 1⅓ taza de agua
- Cobertura para pastel
- Helado
- Chispitas de azúcar (opcional)
- Calienta el horno a 350 °F.
- Prepara la mezcla según las instrucciones de la caja.
- Acomoda los papeles para cupcakes en un molde para horno y vierte aproximadamente 3 cucharadas de la mezcla en cada compartimento.
- Hornea los pastelitos, por unos 15 minutos, o hasta que al introducir un cuchillo, éste salga limpio.
- Retira los cupcakes del horno y déjalos enfriar.
- Con la ayuda de un cuchillo, abre un agujero en cada cupcake y rellénalo con el helado.
- Cubre nuevamente los pastelitos con el trocito que removiste.
- Adorna con la cobertura y si lo deseas, esparce chispitas de azúcar sobre cada cupcake.

This week we wanted to enjoy ice cream-filled cupcakes inspired by the famous state fairs of the United States. This season begins celebrations all over the country of fun-filled events where many people attend just to taste the delicious desserts sold there.
The first time I assisted at one of these fairs, I became fascinated with the provoking smell billowing from the booths of all the desserts. After a while, whether or not you are hungry, you are likely to end up in line waiting to get one for yourself.
At state fairs it’s common to see plates of fried foods with ingredients one may never have guessed. Things like fried ice cream cookies, fried cake, and of course, the ever-popular funnel cakes.
The cupcakes in this recipe can be made from scratch or from those ready-mix boxes. I tried to save time by using the latter including the frosting which came ready, but if you prefer to make it from scratch this recipe is good for that. I’ve always liked the combination of chocolate cake with vanilla ice cream which is the reason that I chose this recipe.

Ice Cream filled Cupcakes
Prep time: 10 mins Cook time: 15 mins Total time: 25 mins
Servings: 8
Ingredients:
- Cupcakes mix
- 3 eggs
- ½ cup vegetable oil
- 1⅓ cup of water
- Frosting
- Ice Cream
- Sprinkles (optional)
Instructions:
Heat the oven to 350°F
Prepare the mix according to the instructions and place the cupcake papers in the mold.
Fill each compartment with 3 tablespoons of mix.
Bake the cupcakes fpr approximately 15 minutes.
Remove the baking tin from the oven and let cool.
With a knife, cut a circle in the center of each cupcake. This is where we fill it with the ice cream.
Close the hole in the top of the cupcakes with the part that was cut out and top them with frosting.
