Changua (Colombian Breakfast Soup)

- 2 cups milk
- 2 cups water
- Salt to taste
- ½ stalk chopped green onion or scallions
- 4 eggs
- 6 slices toast or calados
- Chopped fresh cilantro
- Mix the milk and water at medium heat.
- Add the salt to taste and green onion.
- Once the mix boils, crack the eggs and add them right into the mix.
- Once fully cooked, remove changua from the stove.
- In a soup bowl, add the toast/calado and cover in changua.
- Sprinkle the chopped fresh cilantro onto the changua.
