Changua (Colombian Breakfast Soup)

  • 2 cups milk
  • 2 cups water
  • Salt to taste
  • ½ stalk chopped green onion or scallions
  • 4 eggs
  • 6 slices toast or calados
  • Chopped fresh cilantro
  1. Mix the milk and water at medium heat.
  2. Add the salt to taste and green onion.
  3. Once the mix boils, crack the eggs and add them right into the mix.
  4. Once fully cooked, remove changua from the stove.
  5. In a soup bowl, add the toast/calado and cover in changua.
  6. Sprinkle the chopped fresh cilantro onto the changua.
