Colombian Ají

- ½ cup chopped tomato
- ½ cup chopped cilantro
- ½ cup chopped green onion
- 1 tbsp jalapeño or any spicy pepper (no seeds)
- ½ cup white vinegar
- 3 tbsp water
- Juice of ½ a lime
- 1 tbsp vegetable oil
- Salt to taste
- Mix all the ingredients together to make a sauce.
- Serve with empanadas, salted potatoes, or grilled meats.
- Can be consumed immediately or refrigerated in well-sealed jars for some time.
