Colombian Ají

Ingredients
  • ½ cup chopped tomato
  • ½ cup chopped cilantro
  • ½ cup chopped green onion
  • 1 tbsp jalapeño or any spicy pepper (no seeds)
  • ½ cup white vinegar
  • 3 tbsp water
  • Juice of ½ a lime
  • 1 tbsp vegetable oil
  • Salt to taste
Instructions
  1. Mix all the ingredients together to make a sauce.
  2. Serve with empanadas, salted potatoes, or grilled meats.
  3. Can be consumed immediately or refrigerated in well-sealed jars for some time.
