Colombian Beef Short Rib Soup

  • 5 cups water
  • 1 lb beef short ribs
  • 5 big potatoes
  • 1 stalk green onion
  • 1 cilantro bundle
  • Salt to taste
  1. In a pot, add the water, ribs, onion, and salt.
  2. Apply lid and let cook until the ribs soften.
  3. Peel the potatoes and cut into quarters. Add to the pot, leaving at low heat until the potatoes are fully cooked.
  4. Check the seasoning and remove the onion and cilantro.
  5. Serve immediately.
