Fried Green Plantain Soup (Patacón Soup)

  • 2 green plantains
  • 2 chicken pieces
  • 2 small portions of meat
  • ½ cup peas
  • ½ cup carrots cut into cubes
  • 5 potatoes into cubes
  • 1 corn cut into pieces
  • 10 cups water
  • Salt
  1. Peel the plantains, cut into thick pieces, and fry in hot oil.
  2. When soft, take out of frying oil and smoosh/flatten using a roller or plate.
  3. Put back into frying oil and remove when golden color.
  4. In the meantime, add water and meat into a pot. Let boil and add the peas, carrots, potatoes, and corn. Add salt to taste.
  5. About 10 minutes before fully cooked, add the patacones to the mix.
  6. Serve immediately.
