Fried Green Plantain Soup (Patacón Soup)
- 2 green plantains
- 2 chicken pieces
- 2 small portions of meat
- ½ cup peas
- ½ cup carrots cut into cubes
- 5 potatoes into cubes
- 1 corn cut into pieces
- 10 cups water
- Salt
- Peel the plantains, cut into thick pieces, and fry in hot oil.
- When soft, take out of frying oil and smoosh/flatten using a roller or plate.
- Put back into frying oil and remove when golden color.
- In the meantime, add water and meat into a pot. Let boil and add the peas, carrots, potatoes, and corn. Add salt to taste.
- About 10 minutes before fully cooked, add the patacones to the mix.
- Serve immediately.
