Colombian Potato Salad

  • 4 big potatoes peeled and cut into cubes
  • 1 cup cooked peas
  • 2 sausages
  • 2 hard-boiled eggs
  • Mayonnaise to taste
  • Salt to taste
  1. Cook the potatoes in boiling salt water until they are well-done, but not too soft, so they don’t fall apart when mixed with other ingredients.
  2. Drain the potatoes, and let them rest until they are cool.
  3. In the meantime, cook the sausages and cut them into slices.
  4. Peel the hard-boiled eggs and cut them into small pieces.
  5. In a bowl, add the potatoes, peas, sausage slices, and egg pieces.
  6. Add the mayonnaise little by little, and gently mix everything so the potatoes don’t fall apart.
  7. Add the amount of mayonnaise you desire and check the salt.
  8. Serve cold or at room temperature. Always keep salad cool.
