Colombian Beef Short Rib Soup

Colombian Beef short Rib soup is a simple dish made with pieces of beef ribs, potato, cilantro, and stalks of green onion. Different versions include carrots, corn, and a touch of hogao, a very typical sauce of ours made with tomato, onions, and cilantro.
Today, in this article I present to you the basic recipe, the one that can be prepared in a pressure cooker if you want to save time, or you can just use a normal pot. If you happen to choose to use a pressure cooker, cut 30 minutes from the normal cooking time, making sure that all ingredients, especially the ribs, have softened.
Colombian Beef Rib soup is considered a great energy source. Frequently served for breakfast when you are not in your best state, rib soup makes your enthusiasm and energy levels skyrocket.
To make the breakfast whole, we usually accompany the soup with freshly made arepas, and whoever needs an extra energy boost, add a cup of hot chocolate to your meal.
- 5 cups water
- 1 lb beef short ribs
- 5 big potatoes
- 1 stalk green onion
- 1 cilantro bundle
- Salt to taste
- In a pot, add the water, ribs, onion, and salt.
- Apply lid and let cook until the ribs soften.
- Peel the potatoes and cut into quarters. Add to the pot, leaving at low heat until the potatoes are fully cooked.
- Check the seasoning and remove the onion and cilantro.
- Serve immediately.
